Ingredients
500 gm yellow noodle
Beef Stock
400 gm beef bone
10 cups plain water
Gravy
200 gm meat
300 gm small prawn (coated with turmeric & salt, deep fried and blends it)
4 tbsp chilies paste
20 gm cili padi (lagi pedas lagi sedap)
3 garlic
3 onions
2 candlenut
½ inch galangal
1 tbsp curry powder
2 tbsp brown sugar
2 pcs. sweet potatoes & 4 pcs. potatoes – peeled, boil and mashed
Salt & cooking oil
Garnishing Ingredients:
Fresh green chilies- sliced
spring onion – all shredded
bean sprouts
Limau Kasturi- cut half
boil egg – cut half
fried bean curd (cut dice)
fried shallot.
Method:
Prepare garnish before cooking noodle and gravy. Pounded onion, cili padi, candlenut, garlic and galangal. Heat oil and fry pounded ingredients, chilies paste and curry powder until fragrant. Cook paste until dried, and then add water. Add beef stock, meat and boil about 10 to15 minutes. Add mashed potatoes, brown sugar and salt. Simmer gently about 5 minutes.
Blanch noodle in a deep pan.
Add yellow noodle in the bowl, pour in the hot gravy and garnish with green chilies, shredded spring onion, bean sprouts, lime, boiled egg, fried bean curd & fried shallot.
